This is a peach-flavored smoothie recipe I put together a few months ago, and with spring in the air – at least here in Western North Carolina! – I thought it would make a good post this week. Sure, it’ll be a while before fresh peaches are in season here, but it’s easy to find the frozen variety right now.
Which makes for a nice taste of summer!
I’m working on a collection of amped-up “Superhero Smoothies,” which will be compiled into an e-book before too long. All of these will incorporate some herb combinations along with the fruit, milk/water, protein, fiber and avocado (or bananas, for those whose blood sugar will tolerate them).
The Divine Dragon doesn’t care for bananas, so avocado works better for us. It gives a fabulous consistency to our smoothies, almost like custard some days! For a thinner consistency, you can increase the water/milk content.
Admittedly, I kind of like beating the mixture down with the Vitamix’s tamper – it has the added benefit of reducing stress.
This version includes ginger, cinnamon and vanilla for their flavors, but with the added benefit of a digestive boost from the ginger and improved blood sugar regulation from the cinnamon.
Ginger Peachy Smoothie
1-2 cups water or plant-based milk (almond, coconut, hemp, etc.) to desired consistency
2 cups fresh or frozen peaches
2 servings of protein powder, vanilla or unflavored (opt.)
2 Tbsp coconut oil
2 Tbsp shredded coconut
(or use 2 Tbsp coconut butter in place of shredded coconut and coconut oil)
1 tsp vanilla extract (opt.)
1 tsp cinnamon
¼ tsp ginger
2-4 cups leafy greens (spinach, kale, romaine, spring mix, etc.)
Stevia, to taste (opt.)
Place all ingredients into a high-speed blender and blend until smooth. Pour and enjoy – outdoors if your weather permits.
